Apple-Blueberry Skillet Crisp (Crumble) Heaven

I found the ultimate apple crisp recipe and I don’t need another one in my life — I like certain recipes like a like my men: monogamous. As an added bonus it’s made in a skillet! Thanks @SerenaWolf you and your #DudeDiet recipes rock.

This Apple-Blueberry Skillet Crisp (Crumble) recipe is what apple crisp dreams are made of, and here it is with a few adjustments from yours truly:

TOPPING:

  1. 1/2 c old fashioned rolled oats

  2. 1/2 c + 1 tbsp whole wheat flour

  3. 1/2 c packed light brown sugar

  4. 1/8 tsp sea salt

  5. 1/2 c chopped walnuts

  6. 1/2 c unsweetened coconut

  7. 1/2 tsp vanilla

  8. 1 tsp cinnamon

  9. 1/3 c liquid coconut oil

  10. 3 tbsp almond milk (or nut milk of choosing or Greek yogurt)

FILLING:

  1. 2 c fresh blueberries

  2. 2 tsp corn starch

  3. 1 tbsp coconut oil

  4. 7 Cortland apples (peeled, cored and diced into 1/2 inch pieces)

  5. 3 tbsp honey (we used my moms! #DaQueenBee)

  6. 1 tbsp fresh lemon juice

  7. 1 tsp grated fresh ginger

  8. 1 tsp cinnamon

  9. 1/8 tsp sea salt

1). Pre-heat oven to 375*F

2). In medium bowl combine oats, flour, sugar, salt, walnuts, coconut, vanilla, cinnamon, coconut oil, almond milk (or Greek yogurt). Mix with hands, and refrigerate until ready to apply this fab topping.

3). Place blueberries and cornstarch in a bowl and gently combine, and set aside.

4). Heat the coconut oil in a large skillet over medium heat. When the oil is hot, add apples, honey, lemon juice, ginger, cinnamon, and sale and cook for 10-12 minutes max (you want soft apples, not mushy!). Turn off heat and add blueberries to the mix.

5). Spread out filling in skillet, and add the crumble topping on an even layer. Bake for 25-30 minutes, or until golden brown.

Let cool for ~10 minutes before serving, and enjoy with ice cream, warm apple cider, and/or your favorite dessert wine!
