No-Bake Chocolate Chip Cookie Balls

We made kid-friendly, mom-approved, no-bake chocolate chip cookie balls, and we all had a blast making and eating them.

I love having a quick-healthy-easy-fun treat recipe on hand to help my littles navigate their way around the kitchen and learn about food and how to follow instructions, and @SerenagWolf’s #DudeDiet “Chocolate-Almond Cookie Dough Bites” is just that!

I subbed peanut butter for almond butter and it was still perfection.

Make these today (even if you need an adult-only batch):

  1. 1 c oat flour (pulsed whole oats in Vitamix; food processor works too)

  2. 2/3 c smooth peanut butter

  3. 1/2 c honey

  4. 2 tbsp chia seeds

  5. 1/2 tsp vanilla extract

  6. 1/4 tsp salt

  7. 1/3 c chocolate chips, + extra for little fingers

  8. Note: the peanut butter appeared a little drier than almond butter so I added a little almond milk to make the dough easier to mold

  9. Mix, taste, roll, taste, refrigerate, taste, and Tra-La!

Bakers in Training

Bonus points if you can guess which cookie balls were made by mom, and which cookie balls were made by the boys.

These will continue to be a rotating fave in our house, and they also happen to be #DadApproved.

AND the boys now understand one of my favorite baking rules: if it breaks off you can eat that piece!
